Ingredients
- 300 g ION PÂTISSERIE classic couverture
- 4 medium eggs
- orange zest or spices of your preference (optionally)
Method
Place the classic couverture over a bain-marie and heat until melted.
When ready, remove it from the stove and let it cool slightly.
Add the egg whites into a bowl, and beat them at medium speed, using a hand mixer, until a light meringue forms.
Right after, place the egg yolks into the bowl with the melted couverture, and stir together with a hand whisk until completely combined.
Next, add the meringue in 2-3 batches into the egg-couverture mixture, while stirring gently with a mariz.
At this stage of the recipe, you could add the orange zest and the spices if preferred.
Finally, line a 20×25 cm small baking pan or a round pan (22 cm diameter) with parchment paper, and empty the cake batter into it.
Bake in a preheated oven, on the middle oven rack, at 170 C fan for about 25-30 minutes.
Optionally, garnish with praline or melted chocolate.
