Ingredients
- 250gr. classic ION couverture chocolate.
- 300 ml heavy cream (35% fat)
Method
In a bain-marie, place the couverture chocolate with 100 ml of the heavy cream.
Stir with a spatula until it turns into a shiny ganache.
Immediately after, remove from the bain-marie and set it aside to cool slightly.
Next, in the mixer bowl with a whisk attachment, beat the remaining 200 ml of the
heavy cream until it forms a very light whipped cream.
Using a spatula, fold the whipped cream into the ganache in 2-3 batches, making
sure the mixture becomes well incorporated each time.
When ready, divide the mousse into bowls of your choice and refrigerate until it sets.
Garnish with whatever you like.
