Ingredients
- 300 gr. classic dark chocolate ION
- 6 medium eggs
- 400 gr. cream cheese
Optional ingredients for the ganache
- 75 gr. classic dark chocolate ION
- 75 ml heavy cream (35% fat)
Method
Melt the chocolate in a double boiler.
Once melted, remove from heat and let it cool slightly.
In the bowl of a mixer with the whisk attachment, lightly beat the eggs until just combined.
While continuing to mix the eggs, slowly add the melted chocolate.
Finally, add the cream cheese and mix until the batter is smooth and fully combined.
Pour the mixture into a 20-22 cm cake ring lined with parchment paper.
Bake in a preheated oven at 170-180°C (fan-assisted) for about 30 minutes.
Method for Ganache
In a double boiler, add the heavy cream and the classic dark chocolate.
Stir with a spatula until you achieve a glossy ganache.
