Ingredients 

  • 500 ml heavy cream 36%
  • 1 sweetened condensed milk
  • 250 g ION PATISSERIE classic couverture

Method

Melt the classic couverture over a bain-marie.

Next, place the heavy cream in a mixer’s bowl, and beat using the whisk attachment until it forms soft peaks.

Continue whisking for one more minute, and then remove the sweetened condensed milk from the fridge, and add it to the mixer’s bowl.

Finally, take the melted couverture, and using a mariz, make infinite patterns in the whipped cream.

Transfer the mixture to a rectangular cake pan and place it in the freezer for at least 5-6 hours.
