Chocolate, Caramel, and Salted Peanut Tart

Ingredients for the tart

  • 110gr. cow’s butter
  • 50gr. powdered sugar
  • 225gr. all-purpose flour
  • 1 tbsp cold water
  • 1 can caramelized condensed milk
  • 200gr. salted peanuts

 

Ingredients for the ganache

  • 250gr. ION classic dark chocolate
  • 250gr. heavy cream (35% fat)

 

Method for the tart

In the bowl of a mixer, with the paddle attachment, beat the butter with the powdered
sugar until well aerated.

Add the flour and continue mixing until the mixture resembles sand. Gradually add
the cold water until the dough firms up.

Then, spread the dough into a tart pan and place a piece of plastic wrap filled with
flour inside.

Bake in a preheated oven at 170 degrees Celsius (340 degrees Fahrenheit), on the
fan setting, for 10 minutes. Then, remove the plastic wrap with the flour and continue
baking for another 25 minutes.

Once the tart is ready, spread the caramelized condensed milk inside and top with
salted peanuts.

Finally, in a double boiler, melt the dark chocolate with heavy cream, stirring until a
glossy ganache forms.

Spread the ganache over the caramel and peanuts and place in the refrigerator until
set.
