- 250 g ION dark chocolate couverture
- 100 g tahini
- 100 g honey
- 300 g oat
- 50 g dried fig
- 50 g dried apricot
- 50 g raw almonds
Over a bain-marie, heat the dark chocolate couverture, which has already been cut into pieces, honey, and tahini. Stir until the ganache is ready and a smooth mixture is formed.
Then, apply a sheet of parchment paper in a 25×35 cm baking pan.
Right after -wear your disposable gloves- add in a bowl the rest of the ingredients and stir by hand. Pour gradually the ganache and keep stirring by hand.
When the ganache is well mixed with the rest of the ingredients, pour the mixture into the baking pan, press down on it with your hands, in order to flatten it out, and spread it. Make the bars as thick as you want.
Finally, refrigerate for 30 minutes, so the mixture can chill. Cut the bars in a size to your liking.
Store in a cool place.
