English Burger

Ingredients

  • 350 g ground brisket
  • 350 g ground chuck
  • 350 g ground beef short rib
  • 5 slices Castello blue cheese
  • 5 eggs
  • 1 onion
  • 1 iceberg lettuce
  • 5 slices of bacon
  • 5 brioche burger buns
  • bbq sauce
  • mayonnaise
  • salt (preferably fleur de sel)
  • pepper
  • olive oil for frying 

 

Method 

Place into a bowl the three types of ground beef and start kneading them very gently, using almost no pressure as possible. Mold the meat into patties of 200-220 g. Make sure they have the same size as the burger buns. 

Then, place a frying pan over medium heat and add some olive oil. When ready, season the patties with salt and pepper and place them into the frying pan. Cook them for about 3-4 minutes on each side, until a golden crust forms and the desired doneness is reached.

Next, remove the patties from the frying pan, place them on a plate and let them rest for about 5 minutes. After 2,5 minutes flip them on the other side.

Use the same pan you prepared the patties, and cook the bacon slices according to your preference. 

Afterwards, cut the burger buns horizontally along the middle. 

Then, add a little mayonnaise and place them into the same frying pan you cooked the patties and the bacon slices so that the buns absorb the juice of the meat and bacon and become even tastier. Make sure you toast only the cut sides of the buns, until light golden brown. 

When the burger buns are ready, place the patties back into the frying pan and add 1 slice of cheese over each patty. Cover the pan with a lid for about 1 minute, until the cheese melts. Remove when ready.

Then, add a little olive oil into the pan and fry the eggs. Season them with salt and pepper.

To assemble, place the burger bun on a plate and add some more mayonnaise, then add some iceberg lettuce (cut it into pieces to your liking). Right after, add the burger with the melted cheese on top, and then the bacon. Slice the onion into rounds, place them over bacon slices, and then place the egg. Finally, add some bbq sauce on the inner side of the burger bun and place it on top.

Serve with homemade fries or salad.
