Greek Easter cookies

Ingredients 

  • 150 g Lurpak cow milk butter
  • 150 g icing sugar
  • 10 g baking powder
  • 2 medium eggs
  • 500 g all-purpose flour
  • 4 g mastic
  • 40 ml orange juice
  • zest of 1 orange

 

Method

In a mixer’s bowl, beat, using the paddle attachment, the butter, and icing sugar on medium speed until light and fluffy.

While stirring, gradually add the eggs, which have already been whipped up. Then, add the rest of the ingredients and stir at the same speed, until it forms into a smooth dough. 

Shrink-wrap the dough with a piece of plastic wrap and refrigerate for at least 30 minutes.

As soon as the dough cools, mold it into shapes of your preference, and keep the cookies as similar as possible to bake evenly.

Finally, whisk in a bowl 2 egg yolks with a tablespoon of water and a pinch of salt, and brush over the cookies. 

Bake in a preheated oven at 170 C fan for about 20 minutes.
