Ingredients for the cookies

  • 100 gr. cow butter Lurpak
  • 150 gr. powdered sugar
  • 1 egg yolk (medium-sized)
  • 300 gr. all-purpose flour
  • 1 vanilla powder
  • Zest of one orange

 

Ingredients for the filling

  • 300 gr. jam of your choice
  • 50 gr. almond powder

 

Method

In the mixer bowl, using the paddle attachment, beat the butter and sugar until light
and fluffy.

While continuing to mix, add the egg yolk.

Finally, add all the remaining ingredients to the cookies and mix until a smooth dough
forms.

Next, in a bowl, mix the jam and almond powder with a spoon to prepare the filling.

Take the dough and form 12-16 small balls, pressing them flat like you would for
small pies.

On one side, place a little of the filling and then fold them closed.

Place them on a baking tray lined with parchment paper and bake in a preheated
oven at 170-180°C (fan setting) for 20 minutes.
