Lemon Cake with Anthotyro Cheese

Ingredients

  • 300 g anthotyro cheese
  • 200 g LURPAK cow milk butter
  • 200 g sugar
  • 3 medium eggs
  • 200 g self-rising flour
  • 1 tablespoon poppy seeds
  • 1 lemon zest

Method

In the mixer’s bowl, with the paddle attachment, beat the butter, sugar, and anthotyro cheese on medium to high speed, until completely homogenized.

Right after, gradually add the eggs, which have been beaten before.

While continuing to mix, add the remaining ingredients, occasionally scraping the mixture down the sides of the bowl with a spatula.

Pour the mixture into a bundt pan with a hole in the middle, which you have previously buttered and floured.

Bake in a preheated oven, on the middle oven rack, at 170 C fan, for about 40 minutes.
