Ingredients
- 500 gr. milk chocolate couverture
- 180 gr. cow’s butter
- 200 ml heavy cream (35% fat)
- 6 medium eggs
- 150 gr. Sugar
- 120 gr. all-purpose flour
Method
In a bain-marie, combine the milk chocolate couverture, heavy cream, and butter.
Stir with a spatula until the mixture becomes a glossy ganache.
In another bain-marie, whisk together the eggs and sugar until the sugar dissolves.
Combine the two mixtures by stirring them together, then add the flour and mix one
last time until the batter is smooth and well incorporated.
Pour the batter into a baking pan approximately 25×30 cm (10×12 inches) and bake
in a preheated oven at 180°C (356°F) with the fan setting on for 20 minutes.
