New Year’s Cake with Meringue

Ingredients

  • 4 medium eggs
  • 250 gr. cow’s butter Lurpak
  • 400 gr. Sugar
  • 300 gr. self-rising flour
  • 100 gr. almond flour
  • 1 tsp cinnamon
  • 1/2 tsp clove powder
  • Zest of 2 oranges
  • 50 ml cognac
  • 150 gr. dried fruits or nuts
  • Powdered sugar for garnish

 

Method
Separate the eggs into whites and yolks.

In the mixer bowl with the whisk attachment, place the egg whites along with 20-40
gr. of sugar from the 400 gr. in the recipe.

Mix at a medium speed until a stiff meringue forms.

Transfer the meringue to a bowl.

In the same mixer bowl, place the butter and sugar, and mix with the paddle
attachment until light and fluffy.

Continue mixing and gradually add the egg yolks.

Next, add the flour along with the almond flour and continue mixing. Then, add the
cognac and dried fruits.

Finally, add half of the meringue and fold gently with a spatula. Then add the
remaining meringue, folding again until just combined.

Pour the batter into a 22-24 cm baking pan lined with parchment paper and bake in a
preheated oven at 170-180°C (340-350°F) with fan, for about 50 minutes.

Once the cake is ready, let it cool slightly and then turn it out onto a plate.

Finally, once completely cooled, dust with a generous amount of powdered sugar.
