No Mixer Lagana Bread (Greek Flatbread)

Ingredients

  • 300 g all-purpose flour
  • 100 g bread flour (otherwise you can use 400 g all-purpose flour)
  • 250 ml water
  • 10 g granulated sugar
  • 10 g salt
  • 30 ml olive oil or tahini
  • 6 g dried yeast

Ingredients for coating

  • 50 ml water
  • 5 g granulated sugar
  • sesame seeds

Method

In a bowl, add all the ingredients (the water should be lukewarm), and stir with a spoon until firm.

Then, cover the bowl with plastic wrap and let it rise in a warm place for 1 hour, until doubled in volume.

After 1 hour, lightly dust your working surface and roll out the dough by hand in lagana shape, and about 1cm thick.

Right after, line a baking pan with parchment paper, and transfer the lagana to it. Cover it with a clean towel and let it rest in a warm place for half an hour.

After half an hour and when the dough has slighlty gained volume, press your fingerprints into the dough all along the surface of the lagana bread.

Next, in a glass, mix the water along with the sugar, until sugar dissolves.

Then brush it all over the surface of the lagana bread, and right after, sprinkle some sesame seeds.

Finally, bake in a preheated oven, on the middle oven rack, at 200 C for about 20 minutes, until golden brown.
