Pudding with New Year’s Cake

Ingredients

  • 700 ml fresh whole milk
  • 130 g sugar
  • 70 g cornstarch
  • 3 medium eggs
  • 1 vanilla vial
  • zest of one orange
  • 400 g New Year’s cake
  • Optional 50 g cranberries

Method

In a small saucepan, add the milk, half the sugar and orange zest, and place over medium heat.

Then, place the eggs with the remaining sugar in a bowl and whisk well.

Right after, add the cornstarch and vanilla. Keep mixing until a smooth, homogeneous mixture is formed.

Just before the milk comes to a boil, remove it from the heat and gradually pour it to the egg mixture.

Whisk vigorously.

After about half of the milk has been poured into the bowl with the egg mixture, place the pot with the remaining milk back on the heat.

Once the mixture in the bowl is combined, pour it into the pot.

Then, remove from the heat. Cut the new year’s cake into pieces and them into the pot along with the cranberries.

Line a baking pan with parchment paper.
Stir the mixture one last time and then, pour it into the baking pan.

Bake in a preheated oven at 170 C fan, for about 25 minutes.
