The Ultimate Chocolate Pie

Ingredients for the chocolate pie 

  • 400 g granulated sugar
  • 250 g cow milk butter
  • 200 ml water
  • 50 ml brandy (optionally)
  • 5 medium eggs
  • 80 g ION cocoa powder
  • 40 g baking powder
  • 250 g all-purpose flour

Ingredients for the syrup 

  • 500 g granulated sugar
  • 1 lt water
  • 125 g ION cocoa powder

Method for the chocolate pie

In a saucepan place the butter, water, brandy, sugar, and stir with a hand whisk over low heat, until sugar melts completely. (be careful not to let it get too hot.)

While stirring the mixture, add the cocoa powder, and turn the stove off. Right after, and while the saucepan is still on the stove, add the eggs, flour, and baking powder. Keep stirring the mixture constantly.

Take a 35×35 cm baking pan, grease, and dust it with cocoa powder properly. Pour the mixture into the pan, and bake in a preheated oven on the middle oven rack, at 180 C fan for approximately 40 minutes.

Method for the syrup 

Into a pot, add all the ingredients needed for the syrup. Place the pot over high heat, and stir the mixture with a hand whisk.

When it comes to a boil, remove the syrup from heat and set aside until cool slightly.

Once the chocolate pie is fresh from the oven, cut it immediately into pieces of your preference, and pour over the lukewarm syrup.
