Walnut Meringue Cookies with Praline

Ingredients

  • 370 g walnuts
  • 150 g sugar
  • 2 medium egg whites
  • 20 g ION cocoa
  • vanilla
  • 1 tablespoon orange zest
  • Praline for the filling

Method

Grate the walnuts in a food processor and pour them into a bowl, along with the cocoa powder, vanilla, and orange zest.

In a mixer’s bowl, with the whisk attachment, beat the egg whites with half the amount of sugar on medium speed until they become a meringue.

Continue mixing, adding the remaining sugar.

Pour the meringue into the bowl with the walnuts and stir with a spatula until completely homogenized.

Then, make balls of the desired size and place them on a baking pan lined with parchment paper.

Bake in a preheated oven at 170 C fan, for 10 to 12 minutes.

When cooled, put some praline on half of them and cover them with the rest.
