3-Ingredient Butter Cookies

Ingredients

  • 100 g icing sugar
  • 200 g Lurpak cow milk butter
  • 280 g all-purpose flour

 

Method

In a mixer’s bowl, using the paddle attachment, beat on medium speed the butter and icing sugar. Beat until light and fluffy.

Then, add the flour and keep beating until the mixture comes together and forms into a dough. 

Remove the dough from the mixer and divide it into 2 pieces.

On a sheet of parchment paper place the dough and roll it out in an evenly shaped cylinder. Next, wrap the dough with the sheet and place it in the freezer for 30 minutes. 

When the dough is chilled enough, remove the parchment paper and, by using a sharp knife, cut the dough into even pieces, about 1 cm thick.

 Optionally, damp around the edges of the cookies and roll them in granulated sugar.

Finally, line a baking pan with parchment paper and place the cookies in it, making sure to leave enough space between them. Bake in a preheated oven at 180 C fan for about 10-12 minutes.
