Delicious No-Mixer New Year’s Cake-Vasilopita

Ingredients

  • 400 g sugar
  • 300 g self-rising flour
  • 250 g Lurpak cow milk butter
  • 100 g almond powder
  • 150 g dried fruits
  • 50 ml brandy
  • 4 medium eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove
  • zest of 2 oranges
  • icing sugar for garnishing

Method

In a bowl, soak dried fruits in brandy, and let them absorb it until softened.

Then, melt the butter in a pot, over low heat, without burning it. Right after, transfer it to a large bowl.

Next, add sugar and whisk until completely dissolved.

Afterwards, add the eggs one by one, while whisking constantly until incorporated. Then, add almond powder, flour, spices, orange zest, and dried fruits with brandy, and whisk for one more minute until mixed. Make sure you add the ingredients in this order.

Flour and butter a round baking pan (26cm diameter) and transfer the cake batter into it. Bake in a preheated oven, on the middle oven rack, at 180 C fan, for about 40 minutes.

When the Vasilopita is ready, remove from the oven, and let it slightly cool. Right after, flip it over on a plate of your preference.

Finally, when the New Year’s Cake is completely cool, garnish with plenty of icing sugar.
