Spinach Pie Without Eggs and Without Phyllo

Ingredients

  • 200 ml whole milk
  • 200 gr. whole yogurt
  • 50 gr. cow’s butter Lurpak
  • 150 gr. fine semolina
  • 400 gr. frozen spinach, thawed and drained
  • 1 fresh spring onion
  • 200 gr. feta cheese
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp dill or parsley
  • Pepper to taste

 

Method
In a bowl, combine the milk, yogurt, melted butter, salt, and pepper, and whisk
together.

Add the semolina and baking powder, and mix until combined.

Next, add the thawed and finely chopped spinach, along with the dill and
spring onion.

Finally, crumble the feta cheese into the mixture with your hands.

Stir one last time and let the mixture rest for 15 minutes.

Spread the mixture evenly into a baking tray lined with parchment paper.

Bake in a preheated oven at 170-180°C (fan setting) for about 30 minutes.
