Yogurt Cake with Chocolate

Ingredients

  • 125 gr. Classic couverture ION
  • 60 gr. Cow butter
  • 400 gr. Strained yogurt
  • 250 gr. Sugar
  • 3 Medium eggs
  • 320 ml Full fat heavy cream
  • 50 gr. Corn flour
  • Zest from 1 orange

 

Method
In a bain- marie, place the couverture along with the butter and stir with a spatula
until it becomes a shiny ganache.

In a large bowl, combine the yogurt, sugar, and eggs. Mix with a whisk until the
mixture is well combined.

Continue stirring, add the heavy cream, corn flour, and orange zest.

Finally, add the ganache and stir one last time until the mixture is fully homogenized.

Pour the mixture into a baking pan approximately 25×35 cm, lined with parchment
paper, and bake in a preheated oven at 170-180C,in air mode,for about 35 minutes.
