Triple chocolate soft cookies

Ingredients

  • 150 g Lurpak cow milk butter
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 medium egg
  • 180 g all-purpose flour
  • 1 vanilla vial 
  • ½ teaspoon baking soda
  • 50 g ION dark chocolate couverture
  • 50 g ION milk chocolate couverture 
  • 50 g ION white chocolate couverture

 

Method

In a mixer’s bowl, using the paddle attachment, beat the butter, granulated sugar, and brown sugar on medium speed. Beat until light and fluffy.

Then, add the egg, and continue beating until the ingredients are homogenized. Meanwhile, finely chop the couverture chocolates.

Right after, and without stirring the mixture, add the flour, baking soda, vanilla powder, and the couverture chocolates and start stirring again at medium speed for about 1 minute. Stir until the mixture comes together and forms into a dough.

Wrap the dough with plastic wrap, and refrigerate for at least 30 minutes.

Once the dough cools, form cookie balls weighing approximately 70 grams, slightly pressing down on them to flatten. Then, line a baking pan with parchment paper and place the cookies on it, making sure to leave enough space between them, because they will spread while baking. 

Bake in a preheated oven at 180 C fan for exactly 10 minutes. When ready, remove from the oven, and let them cool well.
