Ingredients
- 350 g ION PATISSERIE classic couverture
- 50 g corn wafers
- 50 g cranberries
- 50 g walnuts
Method
In a large bowl, break the wafers into small pieces with your hands.
Right after, add the cranberries and walnuts to the bowl.
Then, over a bain-marie, place the 250 g of the classic couverture, and stir with a spatula until it melts.
In the meantime, chop the remaining 100 g of the classic couverture into small pieces.
When the couverture is melted, remove it from the bain-marie and add the remaining 100 g of couverture, stirring with a spatula until glossy.
Next, pour the melted couverture into the bowl with the rest of the ingredients and mix well with a spatula until completely combined.
Using 2 spoons, take a scoop of your mixture, and place it on a plate lined with parchment paper.
Continue the same process with the rest of the mixture.
Place in the refrigerator until frozen.
Store in the fridge.
