Orange Pie with Whole Oranges

Ingredients

  • 3 medium oranges 
  • 4 medium eggs 
  • 200 g granulated sugar 
  • 1 vanilla vial
  •  juice of 2 oranges 
  • 150 Lurpak cow milk butter 
  • 250 g fine semolina  
  • 20 g baking powder 

 

Ingredients for the syrup

  • 360 g granulated sugar 
  • 360 ml water 
  • juice of ½ lemon 

 

Method 

Place the oranges in a pot full of water and boil over medium heat for about 15 minutes, until they soften.

Afterwards, empty out the hot water, add cold water to reduce the temperature of the oranges, slice them into pieces, without peeling them, remove their pits and then mash them in a food processor. 

Add the eggs and sugar to a mixer’s bowl and beat for 5 minutes at medium to high speed, until the mixture becomes light and fluffy. 

While stirring constantly, add orange juice, vanilla, butter which has already been melted and cooled slightly, the mashed oranges, baking powder, and semolina. 

Beat well until the ingredients are homogenized. Transfer the mixture into a 25×30 cm baking pan and bake on the middle oven rack, at 180 C fan for about 35 minutes

 

Method for the syrup

Place all the ingredients for the syrup in a small pot and heat, until it comes to a boil.

When the orange pie is ready, remove it from the oven and, while it is still hot, begin pouring slowly the warm syrup over the pie.

Set the orange pie aside and let it cool before serving.
