Ingredients
- 400 g strained yoghurt
- 250 g sugar
- 3 medium eggs
- 320 ml heavy cream 35% fat
- 50 g cornstarch
- 125 g ION classic couverture
Method
In a large bowl, combine the yoghurt, sugar and eggs and mix with a hand whisk.
While mixing constantly, add the heavy cream and cornstarch.
Finally, add the couverture that was previously melted in a bain-marie.
Line a baking pan with parchment paper, pour the mixture into the baking pan and bake in a preheated oven at 170 C fan, for about half an hour.
