Ingredients

  • 250 g ION PÂTISSERIE classic couverture
  • 1 can sweetened condensed milk
  • 300 ml heavy cream 36% fat 
  • orange zest, optionally 

 

Method 

Place sweetened condensed milk and classic couverture over a bain-marie, and stir with a mariz until it forms into a homogeneous ganache. At this stage of the recipe, optionally add the orange zest.

Then, remove the bowl from the bain-marie, set it aside, and let it cool. Stir the mixture with the mariz intermittently, so that it does not form a layer of skin on top.

Right after, in another bowl, place the cool heavy cream and beat, using a hand mixer, at medium to high speed, until it gets the consistency of light and fluffy whipped cream (just like yogurt). As soon as the whipped cream is ready, add ⅓ of it into the bowl with the ganache, and then stir with the mariz until completely incorporated. 

Finally, add the remaining whipped cream and gently stir again with the mariz until homogenized. 

Empty the mixture into a bowl of your preference, and cover it with plastic wrap, making sure it touches the surface of the mixture.

Place it in the freezer to chill for at least 3-4 hours.
