Ingredients
• 250 gr. Classic couverture ION
• 1 can sweetened condensed milk
• 300 ml Full fat heavy cream
• Orange zest (optional)
Method
In a bain-marie, add the sweetened condensed milk and the classic couverture.
Stir with a spatula until you achieve a homogeneous ganache.
At this point, you can add the orange zest if desired.
Remove the bowl from the bain-marie and set it aside to cool slightly, stirring
occasionally with the spatula to prevent a skin from forming on top.
Immediately after, in another bowl, add the cold heavy cream and beat it with a hand
mixer at medium to high speed until it forms a light whipped cream (similar to the
consistency of yogurt).
Once the whipped cream is ready, add one-third of it to the bowl with the ganache.
Stir with a spatula until well combined.
Finally, add the remaining whipped cream and gently fold with the spatula until you
get a uniform mixture.
Transfer the ice cream mixture to a bowl of your choice and cover it with plastic wrap,
making sure the wrap touches the surface of the mixture.
Place it in the freezer for at least 3-4 hours to freeze.
