5-Minute yogurt sweet

Ingredients

  • 200 g cookies of your preference
  • 100 g Lurpak cow milk butter
  • 200 g Arla Protein yogurt
  • 1 packet jelly powder, strawberry flavor
  • fresh strawberries for garnishing

 

Method 

Beat the cookies in a food processor, until almost finely ground and transfer to a bowl.

Then, place the butter in a coffee pot and melt over low heat. When ready, pour the melted butter over the ground cookies, and stir constantly with a large spoon until completely combined.

As soon as the cookies are ready, line a plate with parchment paper and place on it a 20 cm round baking hoop. Empty into it the cookie-butter mixture.

Next, spread the mixture and press down on it using a glass with a flat bottom, to flatten it out, create an even base with cookie mixture all around the hoop to resemble a nest.

Then, refrigerate until chill.

Right after, place 500 ml of water into a pot and boil. When ready, remove from the stove and add the jelly powder. Stir well with a hand whisk until completely dissolved. 

Then, add the yogurt and 200ml of the lukewarm jelly mixture, and stir with the hand whisk until homogenized.

Afterward, remove the cookie nest from the freezer, empty the yogurt mixture into it, and refrigerate for at least 1 hour until completely firm.

When ready, empty the rest of the jelly mixture, and refrigerate again for about 2-3 hours. 

Finally, garnish with fresh strawberries.
