Crispy Easter Cookies

Ingredients 

  • 400 g LURPAK cow milk butter
  • 280 g fine brown sugar
  • 730 g all-purpose flour
  • 2 medium eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon (optionally)
  • orange zest (optionally)

Ingredients for brushing

  • 1 medium egg
  • 1/2 teaspoon sugar
  • 1 teaspoon water

Method

In a mixer’s bowl, add all the ingredients needed for the dough, and then cut the cool butter into cubes and add them into the bowl.

Next, beat at medium speed, using the paddle attachment, until completely homogenized and forms into a dough.

Then, remove the dough from the mixer’s bowl, and immediately start shaping the cookies to the size of your preference.

Line a baking pan with parchment paper and transfer the cookies into it.

Right after, into a bowl, add the egg, water, and sugar and mix them until combined. Next, brush the egg wash over the cookies.

Bake in a preheated oven at 180 C fan, for about 20 minutes.
