Easter Cookies Without Sugar

Ingredients

  • 250 gr. Cow butter Lurpak
  • 220 gr. Honey
  • 2 Medium egg yolks
  • 1 kg. soft flour
  • 1 tbsp Baking powder
  • 1 tsp Ground mastic
  • Zest from 2 oranges
  • 40 ml Cognac
  • 300 ml Fresh orange juice

 

For brushing

  • 1 Egg
  • 1 tbsp Water

 

Method
In the bowl of a stand mixer, combine the butter and honey. Use the paddle
attachment and mix until fluffy.

Continue mixing and add the egg yolks.

Add all the remaining ingredients (flour, baking powder, ground mastic, orange zest,
cognac, and orange juice) and mix until the dough is homogeneous.

Shape the dough into desired cookie shapes and place them on a baking sheet lined
with parchment paper.

In a small bowl, whisk together the egg and water.

Brush all the cookies with the egg wash using a pastry brush.

Bake the cookies in the preheated oven at 170 – 180C, in air mode, for about 25
minutes.
