Fluffy Lemon Cake

Ingredients
  • 4 medium eggs
  • 200 g LURPAK LIGHT cow milk butter
  • 300 g granulated sugar
  • 70 ml lemon juice
  • 300 g self-rising flour
  • 200 g whole milk yogurt
  • 2 vanilla vials

Method

Place the eggs along with the sugar into a large bowl and beat with a hand mixer, at medium speed, until light and fluffy.
Then, melt the butter into a coffee pot, without burning it, and then add it into the mixture while stirring constantly until combined.
Right after, add the rest of the ingredients and beat for half a minute at the same speed. Stir until it forms into a homogeneous mixture.
Finally, grease and flour a rectangular cake pan and empty the batter into it. Bake in a preheated oven at 170 C fan, on the middle oven rack for about 35-40 minutes
