Ingredients
- 260 gr. Raw white almonds
- 250 gr. Sugar
- 20 gr. All-purpose flour
- 100 gr. Egg whites
- A pinch of salt
- 100 gr. Jam of your choice
Method
In a large food processor, grind the almonds with the sugar and flour.
Once ready, transfer them into a large bowl.
Next, in the bowl of a stand mixer fitted with the whisk attachment, beat the egg
whites t with the salt until stiff peaks form, creating a meringue.
Immediately after, using a spatula, fold half of the meringue mixture into the dry
ingredients.
Then, fold all the ingredients together until a fluffy dough is formed.
Roll the dough into balls of desired size and gently flatten them.
Place them on a baking tray lined with parchment paper, optionally placing an
almond on top of each one.
Bake in a preheated oven at 170-180C , in air mode, for about 17-18 minutes.
Once cooled, spread a little jam on half of the cookies and sandwich them together
with the remaining ones.
