Ingredients

  • 400 g bread flour or all-purpose flour
  • 4 g dried yeast
  • 250 ml lukewarm water
  • 10 g granulated sugar 
  • 5 g salt

 

Method 

In a small saucepan heat the water, until lukewarm, making sure not to let it get too hot, or else you will destroy the yeast.

Then, in a mixer’s bowl add the yeast, sugar, half of the amount of water, a small amount of flour (approximately ⅕ of flour), and stir well. 

Right after, cover the bowl with a piece of plastic wrap, and let the dough rest in a warm place for 15 minutes.

After 15 minutes, add in the mixer’s bowl the rest of the ingredients. Stir with the hook attachment at medium to high speed for at least 5 minutes. 

When the dough becomes stretchy and pulls away from the sides of the mixer’s bowl, remove it from this bowl. Line another bowl with a towel, which is dusted with flour, and place the dough into the bowl. 

Seal the bowl airtight with a piece of plastic wrap. Preheat the oven to 60 C, turn it off, and immediately after place in the bowl for at least 20 minutes.

After 20 minutes, remove the dough from the oven. Line a baking pan with a sheet of parchment paper and place into it the dough. Spread and form the dough into the shape of your preference, and score the top of the bread to allow it to expand evenly during baking. 

Bake in a preheated oven at 180 C for around 30 minutes, until golden brown.
