- 200 g ION PATISSERIE classic couverture
- 100 g cow milk butter
- 1 condensed sweetened milk
- 5 chocolate wafers
- zest of 1 orange
Place the condensed sweetened milk, butter, and couverture over a bain-marie and stir with a mariz, until a glossy ganache forms.
Then, cut the chocolate wafers into small pieces of 1cm each.
Remove the bain-marie from the stove and add the wafer pieces into the ganache.
Stir well with the mariz, until the wafer pieces are covered with the ganache.
Next, line a plate with parchment paper and place a round 20cm baking hoop on it.
Empty the mixture into the hoop.
Place into the freezer for about 2 hours, or refrigerate for at least 4 hours.
