Ingredients
- 250 g ION dark chocolate couverture
- 220 ml fresh orange juice
- 200 g peanut butter
- zest of 1 orange
Method
Chop the chocolate finely and place it into a bowl.
Heat the orange juice in a coffee pot, until it comes to a boil. Immediately after, pour the hot orange juice into the bowl with the chocolate.
Wait for 1 minute and right after, start stirring with a mariz, until it becomes a glossy ganache.
Then, add the peanut butter and orange zest and keep stirring with the mariz, until it forms into a homogeneous mixture.
Finally, divide a relatively small amount of the mixture into bowls -as the mousse is very rich in flavor- and refrigerate for at least 1 hour.
