Savory Cake with Feta Cheese and Olives

Ingredients

  • 500 gr. self-rising flour
  • 250 gr. LURPAK cow’s butter
  • 200 gr. full-fat Greek yogurt
  • 200 gr. feta cheese
  • 100 gr. pitted olives, sliced
  • 30 gr. sugar
  • 5 medium eggs
  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper

 

Method

In a bowl, crumble the feta cheese with your hands or a fork and add the drained
olives to it.

Mix them together with a tablespoon of flour.

Combine all the ingredients together in a bowl, adding a tablespoon of flour.

In a stand mixer bowl, using the paddle attachment, beat the butter with sugar,
oregano, and black pepper at medium to high speed until fluffy.

Immediately after, add the beaten eggs and continue mixing.

Gradually add the flour while mixing at the same speed until you have a well-
combined mixture.

Remove the bowl from the mixer and, using a spatula, fold in the yogurt and then
the feta cheese and olive mixture until it’s well incorporated.

Pour the mixture into a buttered and floured rectangular cake pan.

Bake in a preheated oven, on the middle rack, at 170°C for approximately 50
minutes.
