Ingredients for Tiramisu

  • 2 packages of Ladyfingers
  • 400ml Espresso Coffee
  • 100gr. Sugar
  • 50ml Cognac
  • 125gr. Classic Couvertoure ION
  • Cocoa ION for garnish

 

Ingredients for the cream

  • 500gr. Cream Cheese
  • 400ml Heavy Cream 35%
  • 100gr. Powdered Sugar
  • Zest of one orange

 

Method for the Cream
In the bowl of a mixer, place the cream cheese with the powdered sugar and orange zest
and mix with a whisk for one minute.

Immediately after, add the heavy cream and mix at medium speed until a thick cream forms.

Method for Tiramisu
In a bowl, combine the espresso with the sugar and cognac and mix with a whisk until the
sugar dissolves.

Use a baking dish approximately 25×35 cm and layer it with a layer of ladyfingers, dipping
each one in the coffee mixture (recommended dipping time is from 5 to 10 seconds).

Next, spread half of the cream over the ladyfingers and continue with another layer of
ladyfingers using the same method.

Finally, pour the remaining cream over the second layer of ladyfingers and spread it evenly.

Sprinkle with the couvertoure and then dust with cocoa powder.

Place in the refrigerator for 2 hours.
