Ingredients
- 250 ml fresh whole milk
- 1 vanilla
- 50 g Lurpak cow milk butter
- 75 g all-purpose flour
- 4 medium egg yolks
- 4 medium egg whites
- 75 g of sugar
- 40 g cranberries
- 40 g orange zest
Method
In a small saucepan, melt the butter over medium heat.
When the butter has melted, add the flour and mix vigorously with a wooden spoon until it forms a dough.
Then add the milk, whisk until smooth, and immediately remove from the heat.
While whisking, add the egg yolks one at a time.
Transfer the mixture to a large bowl, and add the zest and vanilla.
In another bowl, beat the egg whites with half of the sugar with a mixer, and once they start to become a meringue, add the remaining sugar, continuing to mix until it becomes a stiff meringue.
Take 1/3 of your meringue and mix it with a spatula with the first mixture.
Continue with the next 1/3 of the meringue, and right after with the rest.
Finally, place the cranberries into our mixture.
Butter a round cake pan and pour the mixture into it.
Place the cake tin inside a baking pan that has been filled with 3 inches of water.
Bake in a preheated oven at 170 C fan, for about 35 minutes.
