Upside-down apple pie

Ingredients 

  • 4 medium eggs
  • 250 g cow milk butter
  • 300 g granulated sugar
  • 300 g self-rising flour
  • 1 teaspoon cinnamon
  • 300 g jam of your preference
  • 2 apples of your preference

 

Method

In a mixer’s bowl, place the butter and sugar and beat, using the paddle attachment, on medium to high speed, until soft and fluffy.

Whip the eggs, and then pour them gradually into the mixture, while stirring. When the mixture is homogeneous, add gradually the four and the cinnamon, and beat on medium speed for around 1 minute. 

Heat the jam over a bain-marie or in a microwave oven, so that it softens. Line a 24-26 cm round baking pan with parchment paper. Using a brush, apply less than the amount of the jam on the sheet of parchment paper. 

Wash the apples well, cut them into 4 equal pieces, remove the seeds, and next cut them into slices. Arrange them into the baking pan in concentric circles, and then spread the remaining jam over the sliced apples. 

Finally, pour the cake batter carefully over the apples. Bake at 170-180 C fan for around 45-50 minutes. When ready, remove from the oven and let it cool for a while. Turn the apple pie out onto a serving plate.
