Ingredients
- 500 g 55%-57% bitter chocolate
- 250 ml whipping cream 35% fat
- 180 g cow milk butter
- 100 g all-purpose flour
- 6 medium eggs
- 200 g granulated sugar
Method
Over a bain-marie heat the butter, chocolate, and whipping cream, and stir until turned into a ganache. Over another bain-marie, heat the eggs along with the sugar, until the sugar melts completely. Pour the two mixtures into a bowl and add the flour, while stirring with a mariz.
Grease and flour a baking pan, and then pour the mixture into it.
Bake in a preheated oven at 180 C fan for around 20 minutes. When ready, let the brownies cool (about 30 minutes) and serve with praline or ice cream of your preference.
